When you live in Cabo San Lucas the list of things to do is endless. For many, fishing is at the top of that list. And why not, when Cabo is world renowned for its abundant marine life? Hennessey’s and the World Paddle Association proudly announce the 2012 World SUP/Paddle Championships to be held in Cabo San Lucas, Mexico on November 3 & 4, 2012. Cabo San Lucas will provide a perfect setting to bring together the best paddlers in the world to compete in tropical weather and warm water for two days of competition. There will be the World Championship race, Open race, sprint races and team relay races.
This is great fun for the entire family, even if you don’t compete. Bring a picnic, some beach chairs and have fun watching with your family.
We had the place to ourselves – along with Edith and her loyal staff of which some have been with her 18 years!
We started the morning at the Pedregal Organic Market to select fresh vegetables (just like the ones that are used in the restaurant!) to use in our cooking. Once we arrived at Edith’s restaurant – a glass of champagne was in order to start the cooking class!
First we started making four different types of homemade tortillas with flour, water and a few seeds – getting the dough just right for the hot grill to cook them on. Fresh fish caught that morning was kept on ice until it’s turn on the fire. The cooking itself kept our attention – a very hot cooking area with different types of wood to cook the food on. It was extremely hot in the outdoor kitchen.
Back to the main inside kitchen which no one can see (I did not know it was there!) we made delicious tortilla soup with all fresh ingredients from the market. Fresh tuna was the topping over lettuce, a strip of tortilla, avocado and a few other secret ingredients for a super salad. No wonder Edith’s is a Cabo San Lucas dining sensation!
You will have to take the cooking class! Several other dishes were made that afternoon in class. Lunch at last with eight wonderful women of all ages and Edith letting her hair down ( it is so long under that hat! ) and signing our aprons as we toasted one more time together.
